Is there a way to do this with the segment pro or woodworker pro software?

It is not possible to do what you want in SP. It can be done in WTP with a bit of work.
You can do what you want in WTP by making a zero board thickness between the rings you want to show as straight alignment. The zero thick ring is the brick pattern for the lower ring.
In this example row 6 is zero thick (see attached wtp file)
